Amano Enzyme’s enzymes are used worldwide for EMC production. We have a full range of lipases and proteases to create custom EMC flavor profiles for our customers. We also have a selection of gluten-free enzymes to support dietary needs.
Enzymes used in EMCs lead to shortened production times and increased flavour.
Lipase
Lipases are used to release fatty acids from unripened young cheese and cheese curds, creating the enhanced flavor of mature cheese. Lipase has been reported to shorten the ripening period from the usual several months to a short period (1-7 days) while increasing the flavor 15-30 fold.1)2)
Protease
Proteases also ripen cheese, improve cheese flavor, and enhances umami of EMCs, resulting in a richer cheese taste.
Our enzymes intensify the flavor of EMCs resulting in delicious cheese flavor even when added in small quantities, reducing the amount of cheese used.
