Overview
Oligosaccharides, in particular Fructooligosaccharide (FOS), Galactooligosaccharide (GOS) are well known prebiotics to help promote the growth of healthy gut microflora. While they are often found in plants, oligosaccharides can be produced by specialty enzymes. Increased interest in our gut health has driven the probiotic and prebiotic dietary supplement market. In fact, according to Statista, the global prebiotic market is projected to reach $8.5 billion by 2025.
Provides enzymes that produce a variety of oligosaccharides.
Oligosaccharides are carbohydrates made up of three to ten sugar units that can be produced through the enzymatic degradation of carbohydrate or enzymatic transfer of simple carbohydrates. GOS and FOS are made from lactose and fructose respectively. Isomaltoligosaccharides and cyclodextrins are cyclic oligosaccharides and are made from enzymatic reaction of starch.

- Prevent starch retrogradation to keep rice, noodles, mochi softer for longer on the shelf
- Improve flavor profile of plant-based milks and beer.
Specialty enzymes used to produce oligosaccharides
- Transglucosidase produces isomalto-oligosaccharides (IMO) such as panose and isomaltose by transferring glucose to maltose or glucose at the alpha-1,6 bond. IMO has low GI and is classified as a prebiotic2).
- G3-generating amylase produces maltotriose from starch. Maltotriose is an oligosaccharide characterized by high water retention and refreshing sweetness.
- Cyclodextrin glucanotransferase produces cyclodextrin (CD), a cyclic oligosaccharide, from starch.
- Galactosidase produces galactooligosaccharides from lactose.
- Fructofuranosidase produces fructooligosaccharides from sucrose.
